After several years of work, Bread. Ukraine. Almanac has been published in Ukraine — a unique bilingual informational and historical art book about Ukrainian bread, its past, present and future. The publication presents bread as an everyday part of Ukrainians’ lives, an element of culture and tradition, a product of a major industry, a subject of artistic reflection and a witness to historical events.
This was reported by the All-Ukrainian Association of Bakers and the Flour Millers of Ukraine Union, which worked on creating the publication.
At the heart of the publication is a simple question: what does Ukrainian bread mean to us? For some, it is the taste of childhood and a family recipe; for others, it is palianytsia, bread from a local bakery or the daily loaf on the table. Behind these familiar images lies a much broader history.
The almanac traces how bread accompanied Ukraine and Ukrainians through different periods of history and acquired new meaning as the country developed. It was preserved in traditions and family memory, became an image in cinema, poetry and photography, formed part of industrial development, survived the tragedy of the Holodomor, and during the full-scale war once again became a symbol of resilience and belonging to the Ukrainian nation — it is enough to recall how the word «palianytsia»became a way to recognise one’s own in 2022.
Bread. Ukraine. Almanac does not provide a single definition of Ukrainian bread — it reveals it from different perspectives and leaves room for further exploration. One story makes you want to find an old film, while another inspires you to learn more about regional baking, the history of mills, artisan techniques or modern breadmaking.
